Athlete Food: Kona Pineapple Coconut Bites

All eyes in the triathlon world are on the Ironman World Championships happening next weekend in Kona, Hawaii. Laurel and I aren’t racing this year, for obvious reasons, but we aspire to be part of the Big Island’s festivities in the future. There are, however, 50 professional men and 35 professional women (ugh! Can we please do something about that???), as well as, hundreds of the top amateurs toeing the line for this 2.4 miles swim, 112 mile bike and 26.2 mile run.

The race will be broadcast live on the Ironman website on October 12. Watching this race online is not exactly like watching a high-def football game on TV, but it does give a sense of how grueling this race is and how tough the competitors are.  And unlike football, which makes me (and you too?) want to eat nachos and drink beer, watching this sporting event will make you want to start a healthfood kick. So we’re offering a healthy and Hawaiian-themed snack to eat while watching chiseled bodies run through 100 degree lava fields.





Kona Coconut Pineapples Bites

Cut the freshest pineapple you can find into bite-sized pieces.

Toast 2 tablespoons of shredded coconut in a small frying pan.

Sprinkle pineapple bites with toasted coconut or dip bits into coconut so they are coated on at least one side.

Serve with toothpicks.
